Pad Thai (or Phad Thai, Thai: ผัดไทย, "Thai style frying") is a dish of stir-fried rice noodles with eggs, fish sauce (Thai: น้ำปลา), tamarind juice, red chilli pepper, plus any combination of bean sprouts,garlic chives, shrimp, chicken, or tofu, garnished with crushed peanuts and coriander. It is normally served with a piece of lime, the juice of which can be added along with Thai condiments. Pad Thai is one of Thailand's national dishes.

Two different styles of Pad Thai have evolved: the version most often found in the streets of Thailand, which is relatively dry and light, and the version that seems dominant in many restaurants in the West, which is heavier and may be covered in red oil.[citation needed]


Ingredients


500 g of rice sticks noodle
200 g of fresh shrimps (peeled, devained and keep shrimps head)
1/4 cup chopped pickled Chinese radish
1/4 cup baked tofu, small diced
4 shallot, minced
5 cloves garlic, minced
1/4 cup dried shrimp (soaked in warm water around 5 minutes and drained)
1/4 cup garlic chives (cut into 1.5 inch pieces)
2 cup fresh bean sprout
1/4 cup crushed peanuts
1/4 cup tamarind puree
4 fresh eggs
3 tablespoons shaved palm sugar
3 tablespoons fish sauce
1/4 cup of water
1/4 cup vegetable oil

How to make Pad Thai sauce

Add vegetable oil in the skillet then heat oil with medium then stir fry the shallot and garlic (minced) then add shaved palm sugar, tamarind puree, fish sauce and 1/4 cup of water. Checking test for sweet, sour and salty.

How to Cooking Thai food, Pad Thai

Just make sure you have everything on hand and prepared before you start stir-frying, because it goes pretty fast once the heat is on.


-Heat the vegetable oil with medium. Stir fry the shrimps until they turn pink then transfer to dish.

-Heat 3 tbs vegetable oil in the large skillet. Stir fry tofu, dried shrimps and Chinese radish (use medium heat) around 1 minute add the noodle ( 100 g or 1 dish) and 1/4 cup of water. Stir fry to mix add 2 tbs of Pad Thai sauce. Continue stir-fry around 1 minute.

-Push noodles to one side then add 2 tbs vegetable oil after break the eggs and scramble then mix it together.

-Add the bean sprouts and garlic chives then mix.

-Serve with uncooked bean sprouts, garlic chives, the edible inflorescence of a banana plant and crushed peanuts. Put cooked shrimps on top.

Green mangoes aren’t always available so this easy-to-make salad can be made with tart green apple instead

Serves 4

Ingredients:

1 4 green mangoes

2 2 tbsp lemon juice

3 3 to 4 tbsp dried shrimps, ground finely

4 2 tbsp roasted peanuts, ground finely

5 4 tbsp fish sauce

6 2 tbsp sugar

7 2 tbsp roasted chili paste, bought or home-made

8 ¼ cup mint leaves

9 2 scallions, chopped

4 brown Thai shallots, sliced

10 ¼ cup coriander leaves, chopped

11 1 small fresh chili, chopped

12 6 green salad leaves, to serve

13 Mint and coriander leaves, to garnish


Directions:

1 Peel, core and slice mangoes into fine shreds. In a bowl, gently combine shredded mango with the lemon juice, dried shrimp, peanuts, fish sauce, sugar and chili paste.
2 Stir through mint leaves, scallions, brown shallots, coriander leaves and fresh chilis.
3 Taste to see if a little extra sugar or lemon juice is needed to balance flavors.
4 Heap on to a bed of salad leaves and garnish with mint and coriander leaves.
